Malteaser Cheesecake

Emily and I have been in the kitchen baking again, this time we baked a delicious Malteaser cheesecake, and it went down a huge hit with everyone who tried it - Emily especially. She isn't usually a fan of cheesecakes, so I was a little surprised when she asked for a slice, but she ate the whole thing, and declared it was 'the best chocolate cake ever'. I mean if that doesn't make you want to make it, what will?

   - 300g Malted Milk biscuits
   - 150g Butter (Melted)

   - 150g Milk chocolate (melted)
   - 300ml double cream
   - 2x 280g philadephia cream cheese
   - 100g Malteaster hot chocolate powder
   - 75g icing sugar
   - 1tsp vanilla extract

How to
- First Emily and I created the base of the cheesecake, and this is always her favourite part. I put all the biscuits into a ziplock bag, and then let Emily wack them with a rolling pin until all the biscuits were just crumbs. 
- We then combined the biscuits with melted butter and popped it into a springform tin - these are honestly the best kind of tins if you haven't got one you seriously need to go buy one! I then popped the base into the fridge to set a little bit while we made the filling.
- Mix the Philadelphia (cream cheese), icing sugar, vanilla, and hot chocolate powder until it is combined. I use a stand-alone mixer, just because it makes the whole thing easier. Once this is combined add in the melted chocolate.
- Next, add the double cream, I don't whip it before adding into the mixture, just because I have a mixer and don't need to. If you're not using a mixer you might want to whip it before adding it to the rest of the mixture. Once you add the liquid double cream to the mixture, whip it on a high setting for 2-3 minutes, you'll know that it is ready as the mixture will look fairly thick. 
- Finally, pour the mixture on top of the biscuit base and set overnight.
- We did decorate the cheesecake the next day using whipped double cream, and malteasers.

I'm actually really impressed with the way this cheesecake turned out. I'd like to say that there is still some left in the fridge but I'd be lying. I actually had quite a few visitors in a few days, and it got eaten pretty fast. Well that's what I've been telling myself anyway - it's not because I actually ate three pieces - shh!
