Easter Rocky Road


With Easter fast approaching Emily and I have been baking some yummy Easter-themed treats. I have to be completely honest here and say I haven't actually tried rocky road before - I know I must have been living under a rock somewhere. It appealed to me because it was a case of just throwing everything in, its stress-free, fairly mess-free, and really quick to make. Emily and I rustled this up in about 15 minutes alongside me making a roast dinner.


Ingredients
100g mini eggs
50g Dr.Oetker Unicorn chips
100g Golden Eggs (Galaxy)
100g Rice Krispies
150g crushed digestive biscuits
50g of marshmallows
1 bar of Cadbury milk chocolate
I'll be the first to admit we didn't actually follow the measurements for the ingredients. we popped half a packet of digestive biscuits into a bag, and I then let Emily give it a good whack with the rolling pin, crushing them. we then put the crushed biscuits, rice krispies, some of the mini eggs - chopped, and marshmallows into a bowl. We then melted chocolate and poured it over the mixture. Mixed it all together and popped it into a tin lined with greaseproof paper.


Emily then set about putting some decorations on the top of the rocky road, before we popped it into the fridge to set. She used the remainder of the mini eggs, some of the unicorn drops and found a couple of Malteaser bunnies in the cupboard which she wanted to add for extra measure - who am I to complain, the more chocolate the better right? We then popped it into the fridge to set, it only took about 1.5 hours to set, and then I cut it up into smallish squares.

Emily absolutely loved making this, and it tasted amazing, making it the perfect Easter treat. Who knows, your children may get tons of Easter eggs this Easter, if they do you certainly know what to do with some of them. It would be the perfect way to use up those chocolate eggs, and be a really fun activity for the children. I'd love to hear if you decide to recreate these for yourself.
