Banana & Chocolate Chip Muffins [Dairy-Free]

As you know, Emily and I love to be in the kitchen baking. It's the one thing we have always done, and even now we have Isabelle I always try to carve out time to bake with her, as it's always been our thing. With Isabelle being dairy free I try to bake and cook from scratch as much as I can, just because I prefer to know exactly what is in her food and it gives me that extra peace of mind. Last week we rustled up some dairy-free pancakes for her (recipe will be up soon) and today, we decided to make some banana muffins.

I didn't actually plan to make these, I just noticed that we had a few banana's to use up before they went bad, with that in mind I decided to make some muffins to save them from being wasted. When I first started baking dairy free, I did find the whole thing a little daunting, but now I find I'm actually reaching for the dairy free ingredients rather than our normal butter.

150g Vitalite
150g caster sugar
150g self-raising flour
3 eggs
50g of chocolate chips (we used moo free chocolate drops)
2 peeled banana's (mashed)

- Preheat the oven to 180
- Cream together the butter and sugar.
- Add in the mashed banana, eggs and flour. I found that I didn't really need to mash the banana, as I was using a mixer, but if you were making the mixture by hand you may need to mash it quite well.
- Add the 50g of chocolate chips and then divide the mixture between 12 muffin cases.
- Bake the muffins until they are golden.

These super easy, delicious dairy-free banana and chocolate chip muffins went down a treat with both Emily and Isabelle - so I thought that I would share the recipe with you. I'd love to know if they are a hit in your home too.
