Dairy-Free Vanilla Cupcakes


As you may know if your a regular reader, Isabelle has CMPA, so her diet is dairy free. Hopefully as she gets older she will be able to tolerate dairy, but for now, we are adjusting things to suit her, so that she doesn't feel excluded and can eat the same kind of foods as us. Emily has been asking to make cakes for ages, and I thought it would be the perfect opportunity to not only spend time with Emily but also try Isabelle out on cooked egg. Turns out Isabelle absolutely loved the cakes, as did Emily. So I thought that I would share my recipe with you, as I was surprised by just how well they turned out - and they tasted amazing.



Ingredients
100g self-raising flour
100g caster sugar
100g vitality
2 eggs
1 teaspoon of baking powder
1 teaspoon of vanilla essence



1. Cream together the butter and sugar
2. Add the egg, baking powder and vanilla essence.
3. Sift the flour and mix together.
4. Bake in the oven on 180 for 8-10 minutes.

For the icing, I just simply used butter icing which I made using 100g vitalite with 200g icing sugar. I then created these butterfly style cakes. Emily absolutely loved making these cakes for Isabelle, and the best thing about them is they taste amazing.
