I love baking with Emily, and use practically any excuse I can to do so. We were recently sent some salted and unsalted wyke farm butter to make a yummy recipe with, and I couldn't wait to use the butter. We decided to make chocolate cupcakes, and topped them with chocolate coated strawberries. As soon as I get Emily's Apron out she runs to the table and is very excited about baking. Emily is very hands on when it comes to baking, I give her the ingredients and she loves to add them to the bowl herself, She also loves to mix the ingredients together.
170g unsalted Wyke farm butter
170g caster sugar
115g self-raising flour
3 large eggs
55g cocoa powder
How to make them?
- preheat the oven to 190c.
- Place the cupcake cases in the tray.
Cream together the butter and sugar until light in colour.
Add the cocoa, and flour into the bowl. Gradually add the eggs and flour to the butter and sugar mixture.
top tip if your batter is a little bit thick you can add a spash of milk.
Divide the mixture between the cupcake cases, and bake for 25 minutes until springy to touch.
Once we had made the mixture, Emily couldn't resist a little taste test. She ended up with a chocolate covered face but from the looks of things, it was definitely tasty. This is the first time Emily has actually shown a interest in cracking the egg. She usually avoids any type of sticky or slimy textures, so I was very proud of her.
Later that night me and Sam tried the salted butter out on some toast, I have to say it was really yummy and some of the best butter I have had on toast in ages. I would definitely recommend you try it. After all nothing beats a cup of tea and toast!
