These Jam tarts are the yummiest thing I have made, my grandad taught me how to make these and we used to make them around Christmas time as a alternative to mince pies. Emily absolutely loved spooning in the jam into the middle, I remember this being one of the first things I ever baked with Emily.
680g plain flour
4 tablespoons of caster sugar
400g Cold unsalted butter
4 large egg yolks
8 tablespoons of cold water
How to make them?
Preheat your oven to 180C, start by sifting the flour into a bowl and using your fingers rub in the butter until you have a crumble-like mixture. Then stir in your sugar and egg yolks, while i'm doing this I add a tablespoon of water at a time until my mixture comes together as a dough. Once you have a dough like mixture, roll it into a bowl, wrap with clingfilm and leave it to chill in a fridge for 15 minutes.
After it has been in the fridge for 15 minutes, roll it out and cut your bottoms. Place the cut circles into a tin, I use a fairy cake tin. Then spoon in your filling. I use 1 teaspoon of Duerr's raspberry jam, and then covered it with a top. We wanted the jam tarts to look festive and they do make the perfect alternative to mince pies. Bake in the oven for 15-20 minutes.
