Valentines Vanilla Cupcakes


Cupcakes are my favourite thing to bake with Emily, and when I was pregnant it was one of the few things I could actually stomach. It seemed only fitting that we baked cupcakes for the launch of our new linky Little Appetites. With Valentines day just around the corner, it seems only right that we make Valentines day theme, I decided to make a vanilla cupcake, with buttercream icing and chocolate hearts on top. 



Ingredients
175g/6oz butter (at room temperature)
175g/6oz caster sugar
175g/6oz self-raising flour
1/2 teaspoon vanilla extract
1/2 teaspoon baking powder
3 large eggs

How to make them?
- Pre-heat the oven to 180°
- Cream the butter and sugar until its a smooth mixture.
- Add the egg and vanilla extract and blend.- Finally sift the flour and baking powder into the mixture. Try not to over mix the mixture, the less you mix it the more fluffy the cupcakes will be.- Finally divide the mixture into the cupcake cases before baking in the oven for 20-25 minutes.


Emily really enjoyed putting the cake cases into the tin. Once that was done she helped me mix the mixture, although it become apparent that she would much rather eat it. She could confidently mix the mixture using a wooden spoon which I'm super proud of her for, I do wish she would get used to the sound of the electric whisk, at the moment she is scared of it. 


For the icing
175g Icing Sugar
75g Butter
Vanilla Essence
- Place the butter in a bowl and beat until it is soft
- Gradually sift and beat the icing sugar into the mixture and add a few drops of vanilla essence. 
- I find adding a little milk to the mixture brings it to the right consistency.


Emily's favourite part of baking was of course the icing, I did pipe some icing onto a few of the cakes, and then let her do the rest. She was happy to put the sprinkles on. To make sure that she could access all the sprinkles she could wish for, I popped them into a plate. I did try and teach her to dip the cake in the sprinkles upside down, but she wasn't that interested in that. She would rather pop them on one by one.

  15. These are super cute cakes, it looks lie you both had a lovely time doing these. Baking with my twins is an experience - definitely a race to get the mixture in the case before they eat it.
