Chocolate Brownie Muffins


We decided to make chocolate brownie muffins this week, and while they were super tasty - they were pretty hard to get right, and I definitely won't be making them again in a hurry! Emily certainly enjoyed eating the mixture though so that is always a plus. 


Ingredients
100g butter
175g caster sugar
75g light brown sugar
125g chocolate (plain or milk)
1 tablespoon golden syrup
2 eggs
1 tablespoons vanilla extract
100g plain flour
1/2 teaspoon baking powder
2 tablespoons cocoa powder

How to make them?
- Preheat your oven to 180 degrees
- Place the butter, caster sugar, brown sugar, chocolate and golden syrup in the pan and melt gently on a low heat until it is smooth and lump-free.
- Break the two eggs into a bowl, and whisk until they are light and frothy
- Remove the pan from the heat, and add the eggs, vanilla extract, flour, baking powder and cocoa powder to the chocolate mixture and mix it thoroughly.
- Put all the mixture into the muffin cases, place on the middle shelf and bake for 25-30 minutes.
- Allow the brownies to cool for 20-30 minutes before serving.



I think this week has been my favourite week of baking with Emily so far, she absolutely loved eating the muffin mixture and she was so happy through the whole thing. As the weeks progress she is more interested in the activity. She now knows what to do with the wooden spoon and how to mix it herself without prompting. She has also has taken a new interest in spooning the mixture into the muffin cases by herself, although this gets really messy really fast. She has also started to realise it is time to bake when I get her apron out which I absolutely love. We did decide not to ice these muffins and served them with whipped cream - YUM!

  11. YUMMY! Brownies and cupcakes mashed together, perfect combo! Your little one looks like she's having fun helping, Abbie always loved helping but used to through the flour everywhere, I guess it's all part of the fun eh? Not sure these would last long in my house >< x
